Macaroni Casserole With Soy

Shyam, my eldest son is a very resourceful and talented young man. Apart from the responsibilities of work, activities and sports that they enjoy, Shyam and his wife, Emily, also cook interesting and healthful meals. My youngest son Jayd, upon tasting Shyam's biryani, declared that it was, better than mum's!

The Soy macaroni cheese dish was created by Shyam's aunt, my sister, Maya Singh. She is an excellent cook and a very good host as well. She made this dish for Shyam a few years ago when he was a guest in her home. He really enjoyed this dish and asked for the recipe

Shyam has made the Soy Macaroni & Cheese dish successfully several times. It has become one of his wife's favorite dishes as well.




INGREDIENTS

  1. 8oz. macaroni
  2. 1 tsp. olive oil
  3. 1 cup grated cheddar cheese
  4. 1 large slicing tomato
  5. Ketchup/tomato sauce
  6. 1 cup roughly crushed corn flakes

METHOD-Pasta & The Final Dish

  1. Boil macaroni according to directions on package. Add salt & olive oil to boiling water.
  2. When al denté drain in colander
  3. In a 9"x13" casserole dish, layer half the macaroni, followed by soy mince. Repeat.
  4. On final layer pour white sauce on top of contents, spreading it evenly. Wash & slice tomato. Layer over white sauce.
  5. sprinkle with 1 cup cheddar cheese & crushed cornflakes. Bake in 400° oven for 20-25 min. until the top is a golden brown
  6. Remove from oven. Let cool. Serve alongside a green salad

Soy Macaroni & Cheese



Ingredients-Soy Mince

  1. 2 cups soy mince flakes
  2. 1 cup sliced onion &
  3. 1 medium sized chopped tomato
  4. 1 cup frozen peas & 1 tomato, sliced, for topping
  5. 6 tblsps. olive oilor Canola oil
  6. 1 tsp. each, cumin & fennel powders
  7. 4 tsp. coriander powder
  8. 1-2 tsps.chili powder
  9. 2 tblsp. crushed garlic
  10. 1½ tsp. crushed ginger
  11. ¼ tsp. turmeric
  12. Salt to taste
  13. 1 cinnamon stick
  14. A handful of coriander leaves for cooking and a few leaves for garnish
  15. A few curry leaves, (if available)

Method-Soy Mince

  • Boil 6 cups of water. Pour boiling water in bowl with soy mince flakes & stir. After a few min. it will be soft. Drain in colander. Keep aside
  • Slice onion & rinse. Wash tomato and chop or use the equivalent canned crushed tomato
  • Peel, rinse & sliver ginger finely. Heat oil in pot. Add cinnamon stick & curry leaves
  • A nice aroma will result
  • Add onions, then ginger, garlic & tomatoes. Sauté until soft & mushy
  • Add the spices & blend in. Now add boiled soy mince & peas. cook on med.-low temp. for about 10-15 min.
  • Add salt. taste. Add more spices if necessary. Add part of the coriander leaves and blend in. Remove from heat
  • Rinse coriander leaves under running water. Chop & garnish soy mince. Set aside.

Ingredients & Method-White Sauce

  1. 3 cups milk
  2. 1 cups grated cheddar cheese
  3. Melt butter in microwaveable bowl for a few seconds
  4. Remove & blend together. Add 1 cup milk & whisk
  5. Microwave 1 min. stopping every 15 sec. to whisk
  6. Add 2nd. cup milk. Follow step above. There should be no lumps. Add more milk if lumpy & whisk
  7. The mix should be a pourable consistency. Add 1 cup cheddar cheese to mix. Set aside

Soy mince is available at the health food section of grocery stores & also at health food stores. You may also find it in frozen form. The soy mince in the dehydrated form needs to soaked in boiling water before it is cooked. It is also called TVP or Textured Vegetable Protein. The recipe is described below.
